Have A Merry Sustainable Christmas
As the countdown to the festive season kicks off, we’re already daydreaming and drooling over our latest Christmas menu. The talented Carousel chefs have been busying themselves creating a deliciously new menu to suit any holiday fête, from formal sit-down dinners to canapé parties…
Not only does it all taste a treat, but sustainability is also at the top of the list. We have established close relationships with a little black book of local British producers and pride ourselves on knowing where all of our delicious ingredients come from. Have a peek at some of our favourite dishes and meet the farmers and fishermen behind all the heavenly produce.
RAW SCALLOPS FROM SCOTLAND
Feast your eyes on this beaut from our friends at Keltic Seafare. These raw scallops come straight from Scotland on the overnight train so they arrive fresh and tasty for each of our events. We’ve paired these with turnip, green almond and gooseberry for a festive shellful of deliciousness.
DAIRY COW FROM 'FOOD CHAIN'
As for the main event, we’ve brought out the big guns. Slow clap for the beautiful Txuleta dairy cow we’re getting in from Food Chain… Their older dairy cows have a higher fat content and as such more marbling, giving the meat a rich and unique flavour. This bucket list beef is deliciously paired with crapaudine beetroot for a melt in your mouth moment everyone will be raving about at the watercooler for months to come.
VEG FROM MASH PURVEYORS
And if you’re wondering where the pasta’s at, look no further. We have for your dining pleasure a belter of a rigatoni with smoked shiitake, house crème fraîche and Berkswell cheese. The veg hails from our friends at Mash Purveyors. Their 6th generation farm has forged partnerships with UK growers over decades, ensuring we get delightful produce delivered to our door day after day. We’ve topped this dish off with Neals Yard cheese for a the win.
