Tara Cookery

You’d normally find Tara Guinness rustling up dishes from our fabulous lunch menu or working alongside one of our international guest chefs as part of our dinner service here in the Carousel kitchen. But what you didn’t know is that when she has a minute to spare (how?!), she’s passing on her skills to keen foodie students as Tara Cookery. From classical French training at Leith’s to the bustling kitchens of India, Tara’s experience is far-reaching and she’s now sharing the love in classes made for anyone, from newbies to foodie pros.

Butter & Cheese Making

It ain’t easy being cheesy – hone your skills in this fabulous introduction to working with dairy. You’ll hear about the processes of butter and cheese making and get stuck in to making your own home-made butter, mozzarella and ricotta. You’ll then be turning your dairy creations in to delicious dishes by flavouring the butter with salt and herbs and create delicious bruschetta with the ricotta and finally a fresh mozzarella salad while it’s still warm.

Knife Skills

In this session you’ll learn to julienne and brunoise vegetables for your own delicious home-made pickles and you’ll be finely slicing and dicing onions and herbs to make a herb salsa.You’ll also prepare ‘Home Cured Mackerel with Apple and Celeriac Remoulade‘ whilst learning a variety of tricky knife skills from filleting a whole mackerel to segmenting citrus fruit for a light side salad.

Classes can last up to three hours, perfect for 4-10 people.
